Hope's Cuvée Chardonnay
Winemaking Notes
The Chardonnay was picked in three different picks – the original vines from the 1980s were picked first, the younger, replanted vines as a separate lot and a lot for clone differences picked later allowing fruit to ripen perfectly for all sections. The fruit was whole cluster pressed and barrel fermented with native microflora. To preserve acidity and freshness, the wines were stopped at 50% malolactic fermentation. The wines were aged sur lie in 50% new oak with batonnage for 8 months prior to bottling. Barrel fermentation and ageing was conducted in both regular Burgundy format 228L barrels and larger 500L puncheons.
Tasting Notes
The 2022 Hope’s Cuvee Chardonnay is a stellar expression of the Chardonnay fruit from our oldest estate block. Rich and generous, the wine has a vibrant energy with balanced acidity. The opulent yet fresh bouquet of orange blossoms, citrus oils, lemon meringue and white florals offer a striking interplay with the honey like texture which integrates the oak profile perfectly. This textural richness should take this wine a long way, as it opens further in your glass. A wonderful accompaniment to food, or on its own, this wine is intriguing and charming.

Padrone
Winemaking Notes
The grapes were picked in the range of 24.5-26 Brix. The vintage yielded concentrated berries with compact flavors, with restricted yields. The grapes were destemmed, thoroughly hand sorted and fermented in SS tanks with focus on maceration and extraction. 18 months in 50% new French Oak allowed the wine to soften with the aromas developing harmoniously. The wine is bottled unfined and unfiltered.

An homage to our charismatic founder, the “Padrone” Cabernet Sauvignon is the inimitable expression of our estate vineyards defining the elegance and richness that comes naturally to the site. Concentrated, intense dark cherry, plum, crushed potpourri, dried herbs, cedar and earthy notes lead the exceptional finesse and purity of this wine. It is texturally rich, resonant and persistent.

Signori
Winemaking Notes

The grapes were destemmed, thoroughly hand sorted and fermented with native yeast. 18 months in 60% new French Oak allowed the wine to soften with the aromas developing harmoniously. The wine is unfined and unfiltered.
Tasting Notes
Crafted to be reflective of the unique signature of our eastern facing estate vineyards, the 2021 Signori is a resounding combination of aromatic complexity, herbal nuances and a sumptuous palette. Bright cherry, plum preserves, cassis greet you on the nose, leading into well woven notes of crushed potpourri, tea leaves, bergamot, sage and mocha. Expressive acidity draws you into a long, lasting finish of espresso, dark chocolate and cloves that continue to evolve as you sip and enjoy your glass.
